Is cod a regular on your weekly meal rotation? If not, don’t sleep on it!! Cod is a great source of protein (20 grams in a serving the size of your plam), as well as an excellent food source of vitamin B12, choline, selenium, and iodine — all nutrients your body requires for optimal functioning. Cod is a flaky white fish that tastes light and refreshing, with no fishy taste.

If you are in a pinch and want to make this ASAP and don’t have time to get the spices, you can mix up your own blend of garlic, sea salt, yellow mustard powder, coriander, tarragon, black pepper, parsley, and some dill weed. So many good flavors. I feel like this would be Ina Garten’s JAM.

You can easily throw this meal together in under 30 minutes…perfect for a busy weeknight, or an evening you just don’t want to put in much effort but still wanna eat well.

Throw the cod fillets into a baking dish with some olive oil, cherry tomatoes, chopped garlic, and lemon slices then seasoning with salt, pepper and the mustard and tarragon seasoning. Bake for 20 minutes, and it’s done! While the cod bakes, you can also roast some veggies on the side, and make a pot of quinoa or rice to serve alongside it. Don’t want quinoa or rice? I think some mashed cauliflower would be tasty, too!

Instructions
  1. Preheat oven to 400F and spray a baking dish with oil. Spread out lemon slices on the bottom of the dish, along with tomatoes and garlic. Lay cod filets on top, drizzle with olive oil and season with salt, pepper and mustard and tarragon seasoning.
  2. Transfer to oven to bake for 15-20 minutes, or until fish easy flakes with a fork. Remove from oven and finish with an extra squeeze of lemon and drizzle of the cooking juices. Serve with your favorite carb and veggie sources. Enjoy!
