Wash and chop all salsa ingredients and combine together in a large box. Gently stir to combine. For best flavor, make ahead of time to allow flavors to marry together.
Baked Cod
Preheat oven to 400F and line a baking sheet with parchment paper. Lay cod filets on top, drizzle with extra virgin olive oil, lime juice, and season with salt and pepper. Bake in the oven for 10-12 minutes or until cod flakes easily with a fork, and is opaque in color. Gently flake fish with a fork.
Assembly
Evenly divide the flaked cod between the lettuce wraps and serve each topped with a generous spoonful of peach salsa and extra squeeze of lime.
