Try making this Mushroom and Lentil Marinara Sauce in place of the traditional meat sauce!

Ingredients
- 2 tsp ghee
- 1 tsp minced garlic
- 1 yellow onion, diced
- 1 cup sliced mushrooms, chopped
- 1 cup cooked green lentils
- Pepper, to taste
- 1 jar organic tomato basil marinara (I got mine from Trader Joe's)
- 1 can diced tomatoes (no salt added)
- Handful of fresh parsley, roughly chopped
- Large pinch of dried oregano
Instructions
- Heat ghee in large pot over medium-high heat until melted.
- Add in garlic and onion and sauté for 5-7 minutes or until softened and fragrant.
- Add in mushrooms and continue to cook for 5-7 minutes until softened.
- Add in remaining ingredients, bring to a boil then reduce to simmer and allow to heat through for 10-15 minutes.
- Serve with spaghetti squash or zucchini noodles!
