Ingredients
  1. 2 tsp ghee
  2. 1 tsp minced garlic
  3. 1 yellow onion, diced
  4. 1 cup sliced mushrooms, chopped
  5. 1 cup cooked green lentils
  6. Pepper, to taste
  7. 1 jar organic tomato basil marinara (I got mine from Trader Joe's)
  8. 1 can diced tomatoes (no salt added)
  9. Handful of fresh parsley, roughly chopped
  10. Large pinch of dried oregano
Instructions
  1. Heat ghee in large pot over medium-high heat until melted.
  2. Add in garlic and onion and sauté for 5-7 minutes or until softened and fragrant.
  3. Add in mushrooms and continue to cook for 5-7 minutes until softened.
  4. Add in remaining ingredients, bring to a boil then reduce to simmer and allow to heat through for 10-15 minutes.
  5. Serve with spaghetti squash or zucchini noodles!
