Happy St. Patrick’s Day! I was excited to share some extra green recipes and meals of my own for a post today, but yesterday morning my phone and the treadmill got in a bit of a fight, and the treadmill ultimately won. It’s been a long 36 hours and counting without a phone, and that’s mainly because I feel like every meal I’ve made has been ‘gram worthy and I’m unable to photograph it…ugh, such a dilemma, right? Praise the sweet Lord for phone insurance, because I only had to shell out $170 instead of paying $550 full retail, and I should have a new phone in my possession by 8 PM tonight. Until then, here’s a list of 10 simple recipes with a wee bit of green to inspire you to eat more greens today – and every day! I’m hoping to try some of these in my kitchen soon!
Sweet Potato and Kale Hash via The Crunchy Radish

Balsamic Brussels Sprouts and Red Grapes via Nutrition Stripped
Fresh Fava Bean and Almond Spread via Love Food Eat

Shredded Brussels Sprouts with Pistachios, Cranberries & Parmesan via Cookin’ Canuck

Massaged Kale Salad via Prep Dish

Simple Poached Egg and Avocado Toast via Pinch of Yum

Green Salad with Apples, Cranberries and Pepitas via Cookie and Kate

One Pot Creamy Spinach Lentils via Pinch Of Yum (again)

Honey Pistachio Baked Sweet Potato via Eats Real Food

Creamy Avocado Yogurt Dip via Two Peas & Their Pod

What a delicious round-up! Thanks so much for including my sweet potato 🙂 If this doesn’t inspire you to eat green, I don’t know what does. Happy St. Pat’s Day!!
Hopefully trying it for myself later this week – if not tonight!
