Peach Salsa
Ingredients:
1/4 cucumber, diced
1/2 red bell pepper, diced
1/2 red onion, diced
1/2 peach, diced
1/2 tomato, diced
1/2 avocado, diced
1 teaspoon sea salt
1 tablespoon lemon juice (or lime)
garlic powder, to taste
1) Cut up and dice cucumber, red bell pepper, red onion, peach, tomato, and avocado.
2) Combine first five ingredients (cucumber through tomato) in a medium-sized bowl.
3) Gently toss all ingredients together before carefully adding in the avocado. Mine was a bit too ripe, and I didn’t want it to get mashed from too much handling.
4) Add 1 teaspoon sea salt, 1 tablespoon of lemon or lime juice, and garlic powder if desired.
5) Cover and let sit for at least an hour to let flavors marry together. Or eat it right away.
I decided to incorporate my peach salsa into dinner tonight by topping a simple grilled chicken breast with it. It would also be a good addition in tacos or taco salads, and will always go well with tortilla chips. Let me know if you try it, I love hearing about and seeing people try my recipes!
ciao down,
