Daily Deliciousness: Peach + Asparagus Salad

So I went grocery shopping yesterday to stock up for the week and what not, and as I was unpacking when I got home I dropped a peach while trying to put it in my fruit bowl. Naturally it bruised and got a little cut in it, so I knew it was now or never with this little guy. After I washed it (sanitation!! not trying to pick up some heinous virus from the floors of 450) and did a little recipe research, I decided upon taking my own spin on an asparagus and peach salad I found online. I prefer to make pretty plain and simple (HA, see what I did there??…jewelry..yeah) dishes that don’t require many ingredients, so that usually means all those frilly ingredients get the nix. Recipe is below the professionally photographed meal.

Peach + Asparagus Salad
Serves: 1 (as always)

5 spears asparagus
1/2 peach, thinly sliced
1/4 cup sliced red onion
1/4 cup canned chickpeas, drained and rinsed
1 T crumbled feta cheese
1 cup raw spinach
dressing of choice

1) Wash asparagus and cut off white ends at bottom. Steam for 5-7 minutes, or until spears turn vibrant green in color.
2) Wash peach, but don’t drop on floor before. Thinly slice half of peach.
3) Assemble remaining ingredients. On bed of raw spinach, add 1/4 cup red onion slices, 1/4 cup chick peas, 1 T crumbled feta cheese. Top with the asparagus spears and peach slices. Add any dressing if desired–I used Trader Joe’s Champagne Pear Vinaigrette, can’t get enough.
