The heat in Athens right now is unreal. I’m usually a big supporter of walking to class over taking the bus, but with 90 degree temps in the middle of the day I’ve started to opt for bus traveling. I’ve realized that something about crazy summer temperatures makes me crave a big refreshing salad. The other day, all I wanted was a Greek salad with tomato, feta, and cucumber, so that’s just what I made for dinner. Recipe below:
Clara’s Greek Salad:
serves: 1
2 cups romaine lettuce
1/2 tomato, diced
1/4 red onion, diced
1/3 cucumber, cut in half moons
1/3 cup white mushroom, roughly chopped
2 T Trader Joe’s Champagne Pear Vinaigrette (regular balsamic vinegar is also perfect, mixed with a little EVOO!)
1) Place 2 cups of romaine on plate.
2) Cut up and chop all veggies and place on top of lettuce.
3) Add feta, if desired.
4) Finish with dressing of choice and enjoy!
This is such a quick and easy meal, great for when you don’t want to put a lot of effort into dinner (or lunch), but still want a healthy and fresh option.
