If you’re ever in the mood for savory carbs, then these Ranch Roasted Potatoes are all you need.
Who doesn’t love a good roasted potato, am I right?? Whether they’re paired with a burger at a summer cookout, or cozies up alongside a veggie omelette for brunch, roasted potatoes are just the bee’s knees.
Now I’ll admit, I often overlook “regular potatoes” in lieu of sweet potatoes, but not out of avoidance or fear of “white carbs”. While yes, regular potatoes do have a slightly higher carb content than sweet potatoes (37 g compared to 24 g), they also contain valuable minerals such as magnesium, phosphorus, potassium and some B vitamins. They also have fiber and resistant starch that help with balancing blood sugar. I think regular potatoes get their bad reputation because of how they are typically prepared and served – highly processed, fried, and eaten in mass quantities. But y’all, it doesn’t have to be that way! Regular potatoes AREN’T bad. They’re actually really, really delicious – AND nutritious – when prepared the right way.
My favorite way to prepare potatoes, you ask? Easy – roasting them. And, these ranch roasted potatoes take it up a notch further because hello, RANCH. I mean, what’s not to love? You’re either lying or aren’t a human if you say that you aren’t a fan of something that’s ranch flavored.
While premade ranch seasoning packets are a thing, I prefer to make my own blend. It’s simple and easy, and I think it’s cool to be able to say that you threw together your own seasoning blend. It gives me the same feeling that I get when I add things to a to-do list that I’ve already done, just to check them off…You know what I’m talking about, I know you do. So, do yourself a favor and make a big batch of your own ranch seasoning – I guarantee you’ll use it on everything! Chicken, potatoes, eggs, popcorn, or even mixed into plain yogurt for a DIY ranch dressing dip. Here we go:
DIY RANCH SEASONING:
- 1/2 t ground pepper
- 1/4 t sea salt
- 1 T onion powder
- 1 T garlic powder
- 2 T dried dill
- 2 T dried parsley
- 1/2 T dried chives
Now that we’ve got that piece of the puzzle settled, onto the full shebang – Ranch Roasted Potatoes!
- 2 Yukon gold potatoes
- 1-2 T avocado oil
- 2 T DIY ranch seasoning
- Line a baking sheet with parchment paper and preheat oven to 425F.
- Wash and chop potatoes. Transfer to baking sheet and toss in avocado oil and seasoning mixture until fully coated.
- Spread potatoes out in an even layer and roast for 30-35 minutes, or until golden brown and crispy.
