When it comes to blog posts, I like to keep ’em like I do my meals — quick, easy and simple! I’m admittedly one of those people that doesn’t read a lick of a blog post and just immediately scrolls down to the recipe. Anyone else with me???
Our lives and schedules are jam-packed, and as much as I would love to have all of this extra time to invest in reading blog posts cover to cover, I’m just not there. It takes a lot of work, time and effort to craft together witty, informative and thoughtful blog posts, and some people just have a knack for it! I, on the other hand, do not…as I’m sure you can tell by the sporadic posts.
Instead of holding myself and my content to the standard of perfection, I’m deciding to just get it out there to the internet world! Quick, easy and simple posts AND recipes.
I will give a short word on these little Chocolate Cherry Energy Bites…they are AMAZING! I subbed dried sour cherries in place of a date and holy moly it added so much flavor! These are without a doubt at the top of the list for one of my favorite energy bite recipes š
These are my go-to mid-morning or late afternoon snack, pre workout fuel, or sweet tooth satisfier. There’s no added sugar — actually, no sugar at all (aside from the cherries) — but plenty of healthy fats, fiber and protein to stabilize blood sugar and provide sustained fuel for whatever you’re tackling.
As for substitutions, you can…
- Omit collagen peptides if you don’t have any – this won’t alter flavor or consistency whatsoever.
- Use whatever nut butter you have on hand.
- Sub almond flour instead of oats.
- If you don’t have all chia/hemp/flaxseed, just use a combination of what you do have!
Granted the final taste might come out a bit different with all of these changes, but you’ll still end up with some chocolate and cherry goodness if you leave those two key ingredients in š
Onto the recipe!
- 1/4 c dried sour cherries
- 1/2 c oats
- 1/2 c chopped walnuts
- 1/2 c almond butter
- 1/4 c almond milk
- 2 scoops collagen peptides
- 1 T chia seeds
- 1 T hemp seeds
- 1 T flaxseed meal
- 2 T cacao powder
- 1 T cacao nibs
- Soak cherries in warm water for 5 minutes while collecting/measuring remaining ingredients.
- Add everything to a high-speed food processor & pulse together. (If you donāt have a food processor, just mix & mash everything together in a bowl by hand with a fork!)
- Roll into ping pong-size balls. Store in the fridge for a week for the freezer for a couple months!
