Energy bites are definitely having a moment, aren’t they? Seems like every time I scroll through the ‘gram, I see another recipe for an energy bite/ball. Which, for the record, I prefer to word bite over ball. Regardless, I’m a firm believer that you can never have enough different recipes for these little guys. As I try to expand and vary my recipe repertoire for energy bites, I’ll make sure to continue to share the winners with y’all!

No better pick-me-up than these chocolate cake energy bites! They taste sinful, but they're loaded with good-for-you ingredients and superfoods that are perfect for an afternoon snack, pre-workout bite, or sweet tooth tamer!

Ingredients
- 1/2 cup gluten-free oats
- 1/2 cup almond flour
- 1/3 cup creamy, runny peanut butter
- 2 scoops collagen peptides
- 1/4 cup raw cacao powder
- 1 T vanilla extract
- 1 T chia seeds
- 1/2 T maca powder
- 2 T shredded unsweetened coconut
- 1/4 cup unsweetened vanilla almond milk
- 2 t natural fiber sweetener (I used Silver Fern brand, however this is completely optional)
- Cinnamon, to taste
Instructions
- Combine all ingredients in a large mixing bowl, stirring until incorporated into a dough-like texture. Allow to sit in fridge ~10 minutes to harden up slightly (this makes it easier to form and roll). Roll into balls and store in fridge in an airtight container for up to 2 weeks.

Now that I’ve been in the “real-world” with a business-related job for a couple years, it has been heavy on my mind and heart to do something more – something I love.
I have been interested in nutrition/dietetics as a career for a long time and have finally decided to do something about it. But going back to school for another degree sounds incredibly daunting, not to mention extremely expensive. Do you have any suggestions for someone who would like to transition into the field? Or know someone who has done so successfully from something so different?

Hi Toni! I’m sorry I’m just responding to this, but I’m so glad that you are enjoying my posts!
I know it can be daunting to think about totally changing the course of your life, and sometimes it isn’t feasible! I still think it’s possible to incorporate nutrition/wellness in others ways, without going back to school full force. There are several online programs for functional nutrition/health coaching that you could consider – they do cost money and some may not carry the weight/credentials that going back to school offers, but I think they are still a great way to build a foundation and background in the field! My best advice on that front is to just do your research and make sure the program is reputable (i.e., it will likely take longer than 1 course or 1 month to obtain a “certificate”). Hope that helps!
