Banish Breakfast Boredom

I knew it was gonna happen sometime, I just never expected it to happen so soon. That’s right, I…..

am over oatmeal.

WHAT. WHAT WHAT WHAT. 

Yes, you read that correctly. I, Clara Norfleet, am sorta kinda over oatmeal. Well, at least for the moment. Seeing as I’ve had it for 97% of my breakfasts since the beginning of October, it was just a matter of time before my tastebuds turned up their nose at my daily bowl of oats. It’s happened before, and I’m sure after this bump it will happen again, but I’m choosing to not ruminate on it too much. Instead, I’m looking at it as a great opportunity to trek into uncharted territory with some new meal ideas. 

The only problem? The only other meal ideas I had were avocado toast with eggs and a greek yogurt parfait loaded with fruits and toppings galore. Don’t get me wrong, I think these are both GREAT ideas, but I’m looking to adventure into some real uncharted territory with some unique and original breakfast ideas. 

So, like any young millennial, I turned to social media and asked YOU for your favorite breakfasts ideas and was overwhelmed with the response I received! Seriously, y’all are all so awesome. And have really good taste in breakfast, too šŸ˜‰

The recommendations and ideas were so good, that I wanted to creative a running list of breakfast ideas on my blog so that we could all benefit in those times we’re in a breakfast rut, or just looking for new ideas. I’ve broken them up into savory and sweet categories for easier navigation, and attached some links where appropriate for additional guidance. I also included some of my favorites, but I’m serious when I say y’all nailed it! Consider this girl’s breakfast boredom banished!

SAVORY

  • Avocado toast with runny eggs…..always a winner
  • Egg sandwich on english muffin with spinach, sriracha/hot sauce, tomato slices and avocado
  • Egg “muffins” or “cups” with veggies 
  • Mashed sweet potato and winter squash with chia and flaxseed, topped with almond butter
  • Roasted sweet potatoes, bell pepper and onions in olive oil, sea salt and cumin; eaten with 2 scrambled/fried eggs
  • Toast with mashed avocado and egg whites, topped with a sprinkle of nutritional yeast and pepper
  • Bake an egg in half of an avocado and top it off with a little salt and pepper; pair with a sausage patty
  • Brown rice cake with hummus and hardboiled egg whites, topped with red pepper flakes
  • Protein Power Goddess Bowl via Oh She Glows
  • Mexican Omelet
  • Toast with cottage cheese and sliced tomato and/or cucumber and/or avo
  • 1 boiled egg + toast topped with cottage cheese and cinnamon + half a grapefruit or berries
  • Quinoa bowl
  • Egg bake with lots of veggies, cut into individual portions for weekday morning, paired with fruit
  • Savory oats
  • Egg scramble in a tortilla 
  • Breakfast burrito with eggs, sauteed peppers and onions, avocado, dollop of greek yogurt and sprinkle of cheese
  • Poached egg over steamed spinach and roasted potatoes, with fruit on the side 

SWEET

  • Baked sweet potato with greek yogurt (seriously my new favorite – I’ve also done with mashed acorn squash and topped with sliced almonds and chia/hemp seeds with fresh fruit!)
  • Oatmeal Blueberry Yogurt Pancakes via Ambitious Kitchen
  • Plain greek yogurt topped with berries and homemade granola
  • Plain greek yogurt with bananas, cinnamon and stevia, with a slice of coconut/buckwheat bread topped with almond butter 
  • Creamy rice with fruit
  • Chia pudding
  • Banana ice cream
  • Kodiak Cakes, waffles, pancakes
  • Smoothie bowls with endless toppings and mix-ins
  • Smoothies with oats blended in
  • Homemade orange scones with an egg on the side 
  • Almond butter and jelly sandwich
  • Banana nut butter sandwich
  • Sunflower seed butter and strawberry wafflewich 
  • French toast
  • Quinoa bowl with nuts and fruit
  • Buckwheat porridge with endless toppings
  • Protein muffins
  • Chopped fruit with granola, chia, nuts/seeds, with either yogurt or milk of choice
  • Quinoa flakes
