Channel your inner Jack Johnson and make a batch of these Banana Pancakes for a wholesome, comforting and nutritious weekend breakfast or brunch!
I woke up this morning, still *essentially* snowed in from snowstorm Helena. My only real plans on Sunday’s are to go to church, however it was cancelled this morning due to the road conditions. So, after waking up at 7:30 am with NO PLANS for the WHOLE ENTIRETY of the day, I figured I could at least spare some time to be creative in the kitchen.
My best friend from home sent me a text a few days ago saying that she made the best banana pancakes for breakfast, and I would be lying if I said I hadn’t thought about them off and on all week. Lying in bed this morning, they resurfaced in my mind, and I knew in that moment that would be my creative venture for the day.
*Scene change: Finally moved to the kitchen after 30 minutes*
You will probably already have most of the main ingredients in these. The only one you miiiight not have would be the marine collagen from Vital Proteins. I love them because they add a couple extra grams of protein to help stabilize blood sugars first thing in the morning, and don’t have any flavor. Collagen has also been studied as a beneficial supplement for skin, hair, nail, bone and joint health. Anyway, if you don’t have this, you can easily omit it, or sub in protein powder of your choice. They should still turn out good!
The remaining ingredients are SO SIMPLE: 1 banana, 1 egg, 3/4 cup old-fashioned oats, cinnamon, and like, 1/8 of a cup of almond milk! This will make 4 pancakes. Feel free to expand as needed!
- 3/4 cups old-fashioned oats
- 1 banana
- 1 egg
- 2 scoops Vital Protein marine collagen powder
- Generous sprinkle of cinnamon
- 2 tablespoons unsweetened almond milk
- Pulse oats in food processor until ground into flour consistency.
- Add in remaining ingredients and blend until combined.
- Heat non-stick skillet over medium-high heat, spray if necessary.
- Drop 1/4 cup servings onto pan and cook on both sides until fully cooked. Pancakes will be ready to flip when easily lifted from pan with spatula.
- Serve with fruit, peanut butter, syrup, whatever you enjoy!
- You can also add in nuts, blueberries, chocolate chips, vanilla. pumpkin, or any other usually pancake add-ins.
